Coconut Milk
Why pay exorbitant amounts for commercially prepared coconut milk (which often has weird additives) when you can make it so simply at home?
1 cup water
1 cup shredded, unsweetened coconut meat, preferably fresh. Do not use dessicated coconut, please.
Blend ingredients thoroughly and strain if desired. Coconut milk adds a great flavour to many different recipes. Store in your fridge in an airtight container for up to one week.
