Poppi’s Pasta Sauce
My step-Dad shared his secret recipe with me, and now I’m sharing it with you!
good quality extra virgin olive oil
1 red onion, chopped fine
1 sweet, white onion, chopped fine
1 bulb of garlic, peeled and minced or crushed
large handful of minced fresh basil
2 cups sliced mushrooms
Two 28oz cans diced or crushed tomatoes
2 fresh, ripe tomatoes, chopped
2 tsp hot sauce of your choice (I like Louisiana Hot Sauce)
1/2 cup sweetener
2 tsp oregano
2 tsp black pepper
1 tsp salt
Use enough olive oil to thoroughly coat the bottom of your sauce pan. Heat this over medium. Add the onions, garlic, and mushrooms and cook slowly until it becomes a thick mass and the onions are almost translucent. Add the basil, the tomatoes (both canned and fresh), and all the seasonings, and bring to a low simmer. Cook for about one hour, uncovered, until sauce has thickened. Taste and adjust seasonings to your liking. Serve over hot, cooked pasta.
Makes enough sauce to serve pasta to 6-8 people.
This sauce is even better the next day.
