Creamy French Onion Pie
Passed on to me from a non-vegan friend, am I ever glad I got this one!
2 tbsp extra virgin olive oil
3 large onions, finely diced
1 cup soy or nut milk
1/3 cup firm tofu, crumbled
1 1/2 tsp sea salt
1/4 tsp freshly ground black pepper
⅛ tsp nutmeg
2 tbsp unbleached flour
1 tbsp couscous
1 unbaked 9” pie shell
1/2 to 1 cup shredded, non-dairy cheese (mozzerella- or Montery Jack-style are best)
Sauté onions in oil over low heat until caramelized. This can take up to a half hour over low heat. You don’t want to rush this process. Stir them frequently and make sure they aren’t burning.
In your food processor, blend the tofu, milk, salt, pepper nutmeg and flour until smooth. When blended, combine with the onions and add the couscous. Pour into the pie shell, top with the “cheese” and bake at 350 F for about 30 minutes.
