Fu Loaf
If you’ve got any leftovers of this dish, slice it up cold and make sandwiches out of it!
1lb extra firm tofu (450gr)
1/2 lb medium-firm tofu (225gr)
1 cup rolled oats
1 onion, chopped fine
2 cloves garlic, minced
1/4 cup dried parsley
1/2 cup natural ketchup
1/3 cup soy sauce
1/3 cup dijon mustard
salt and pepper, to taste
Sauté the onion and garlic until soft in a bit of olive oil. Mash the tofu’s together with your hands until they have a ground-beef consistency and are well-mixed. Mix in all other ingredients, and pour into a lightly oiled loaf pan. Bake at 350 degrees F for an hour to an hour and 15 minutes, until the top is dry and browned but the middle still feels soft when you poke it gently. Let it cool for 10 -15 minutes before serving or it will crumble apart as you do.
