All Purpose Melty Cheez
I use this whenever I need some kind of cheezy topping baked over something – casseroles, enchiladas, pizza, lasagne, etc.
2 cups non-dairy milk
1/3 cup nutritional yeast
1/4 cup light oil
2 tbsp unbleached flour
1 tbsp tapioca starch
1 tbsp prepared mustard (optional)
sea salt to taste
Place all ingredients in a saucepan and whisk over medium heat until very thick. Drizzle this evenly over your dish in the last five minutes of cooking. Broil for 2 to 3 minutes, or until it’s bubbling and browning slightly. Let stand outside the oven for ten minutes before trying to cut.
