Seitan
Seitan generally refers to the protein, called gluten, found in wheat that has been prepared in a way to make it resemble meat in texture and flavour. You can make your own seitan from whole grain wheat flour, or you can save a bunch of time and buy gluten flour. When you get the gluten flour home you mix it with a variety of spices and seasonings and some liquid to form a very rubbery dough. This dough is then cooked – either through simmering in a broth, baking or braising. Different methods of cooking produce markedly different results in the texture and consistancy of seitan, so if you try it one way and don’t like it, give it a shot another way. Some people even mix gluten flour with other grains or even tofu to produce different textures and flavours. Seitan is a highly versatile and delicious protein food and unless you have a sensitivity to gluten or wheat it can be an excellent addition to your vegan diet.
